The 1,500-word [minimum; there is not a maximum word count] interpretive essay [not a research paper] is based on Liu’s book From Canton Restaurant to Panda Express: A History of Chinese Food in the United States. No other sources, such as other books and websites on the Internet, should be used. The goal is to discuss the impact of Chinese food on US society [as presented in the book] and the impact of Chinese food on you as an individual. In the United States, the three most prevalent forms of “ethnic cuisine” restaurants are Chinese, Mexican, and Italian. Of those three, which do you enjoy or frequent the most with your family? Is there another “ethnic cuisine” that you really enjoy? When citing a quote from the book, merely indicate the author’s name and the page number parenthetically within the text. For example: (Liu, p. 58).
